SALADS
Peppery corns and tomato salad
Ingredients
Amount
Whole corn kernels
¼ cup
Yellow capsicum
¼ #
Green capsicum
¾#
Pineapple
1slice
Tomatoes
1#
Cucumber
½#
Green Chillies
1-2#
Mint leaves
1/2cup
Pepper Corns
5#
Lemon juice
1tbsp
salt
to taste
Method:
1. Boil corn kernels in salt water until soft, drain thoroughly and cool.
2. Wash, halve, and remove the seeds of the yellow capsicum and dice it ito 1 cm sized pieces. Cut pineapple slices into1 cm sized pieces.
3. Wash tomatoes, cut into quarters, remove the seeds and then dice into 1cm. sized pieces. Peel, and cut cucumber into1 cm pieces.
4. Wash green chillies, remove stem and then chop. Clean, wash and chop mint leaves. Crush the pepper corns.
5. Combine corn kernels, yellow pepper, green pepper, tomatoes and pineapple. Stir in lemon juice and add crushed pepper corns, salt, chopped green chillies and chopped mint leaves.
6 Arrange in a serving dish and chill before serving.
  A very tasty and healthy combination of corn fruit and veggies. Contains vitamins such as B-carotene, Flavonoids and vitamin C which are antioxidants and protect us from against various illnesses.
